Weitz explained the choice of Tucson on the Collected Animals forum: one of them suggested a desert record, and the others agreed it had not been done yet. The engineer Scott Colburn, who worked on Feels, knew the owner of Wave Lab. The sessions were not easy. Portner said it was the first time the band had been unsatisfied with what was happening, and as their first album for Domino they feared handing in something difficult. The title came from Lennox on a flight to Greece, looking at the strawberry jam that came with his bread. He wanted the record to sound the way it looked, synthetic, sharp and futuristic, yet tangy and sweet. Portner made and photographed the cover.

The album leaked in clusters from June 2007, three songs at a time, and the last three, Fireworks, Cuckoo Cuckoo and Derek, on 4 July. Metacritic gives it 79. Richardson of Pitchfork said the band mastered its distinctive experimental approach to songwriting on what he called its first true pop record. Peacebone and Fireworks were the singles, and by 2012 it had sold 84,000 copies.
