Recording started with Spoon, which Schmidt said set the tone for the rest of the album. United Artists gave the band a firm June 1972 deadline, and with a day to go only the first side was finished, so Soup was improvised that afternoon. Czukay and Karoli edited the record. Karoli remembered Suzuki and Schmidt losing studio time to obsessive games of chess. The cover, by Ingo Trauer and Richard J. Rudow, shows a tin of okra, and the title is Turkish for Aegean okra.
Melody Maker called Can "the most talented and most consistent experimental rock band in Europe". Pitchfork's Dominique Leone later judged it their most focused album, and it placed 19th on Pitchfork's list of the best albums of the 1970s. In 2020 it became the first Can album on Rolling Stone's 500 greatest albums list. Stephen Malkmus listened to it every night for about three years.
