Moonlight on Vermont was written around December 1967, together with Sugar 'n Spikes. It was recorded at Sunset Sound Recorders in August 1968, about seven months before the rest of the album, with Van Vliet, Harkleroad and Cotton on guitars, John French on drums and Gary Marker standing in on bass after Jerry Handley left. Veteran's Day Poppy was cut at the same session.

The song carries a borrowed phrase, "come out to show dem" from Steve Reich's tape piece Come Out, and its ending includes the refrain of the spiritual Old-Time Religion. Pitchfork's Marc Masters pointed to the Reich quotation as one of the references to musical history scattered through the album.

The band played it live, and a version appears on the live album I'm Going to Do What I Wanna Do: Live at My Father's Place 1978. Ultimate Classic Rock called it swampy blues, and Rolling Stone called it abstract expressionist.
